Meatless Chili (with Lentils)





For a long time I have heard about THE HEALTH BENEFITS OF LENTILS but I confess, Ive never cooked or eaten them. Since beginning this weight loss journey, I have been looking up new and healthy recipes to try. Tonight I made Lentil Chili.

I soaked dry lentils in water over night and then cooked them on low in my crockpot all day while I was at work.  When I got home, I added a large can of tomato sauce, a can of diced tomatoes with green chilis, a chili seasoning packet and some dried onion flakes. I let it cook in the crockpot for about 20 minutes.

We ate this with a LITTLE brown rice, some cheddar cheese and a small amount of sour cream.

You must try it and don't forget to read about the BENEFITS OF LENTILS! We will be eating more of these in our house.

Smores French Toast

 I saw this recipe online and knew that I HAD to try it. I love Nutella, and I love marshmallows, and I love french toast! Putting them together is heaven!
 I did put a LITTLE syrup on top and it was so good!
 Almost as good as Peanut Butter French Toast :)

This is how we do French Toast

 Growing up, the only way my family ever ate french toast, was with peanut butter. 
Peanut butter on hot french toasts, melts just right and topped with syrup ... its amazing!

Snow Cream

 My friends who grew up where it snows alot have never hear of snow cream!
Here we are, in the south and rarely get a good snow and we get all excited to make it!
(We are all about food!)
The recipe above was taken from another blog but thats how I make it, so Im sharing it!

My dad made it differently when we grew up. He always used flour,egg, sugar, vanilla and a little salt. He cooked it like a custard and then cooled it down. I love it that way too! 
Ive heard of people putting Kool Aid over snow and maple syrup!

Not healthy but yummy

 In these parts, local churches sell Brunswick Stew and sell it for around $6 a quart. Its always a yummy winter treat. They cook them in huge cast iron pots outside. 
Recently, my cousin posted on Facebook about buying collard sandwiches. 
I had never heard of them! She also lives in N.C. but in her area the churches sell collard sandwiches as a fund raiser. She told me about them, so I decided to make some at home,
You fry cornbread in thin pieces (like a pancake) and then add the collards and either top it or serve fat back on the side. Now, I'm not a fatback fan most of the time but I decided to try it.
Next time, Ill leave off the fat back unless I'm serving those who really like it. 
 Over all, it was oh so good on a Saturday afternoon when I'm not feeling quite up to par. 

Over the next week I will be getting my mind ready to begin my green smoothie/healthy (clean) eating journey. In the mean time, if I want a collard sandwich or some Brunswick stew, I'm gonna eat it!
